Street Style Pav Bhaji
Ingredients
Potatoes(roughly chopped) - 3
Carrot(roughly chopped) - 1
Beetroot - 1/2
Tomatoes(roughly chopped) - 3
Green Chillies - 1-2Oil - 3 tsp
Water - 1-2 cupsButter - 2 tbspCumin Seeds - 1 tsp
Onion(finely chopped) - 1 big sized
Capsicum(finely chopped) - 1
Ginger-garlic Paste - 1 tbspFrozen Green Peas - 3/4th cup
Kashmiri Red Chilli Powder - 1 tsp
Pav Bhaji Masala - 2 tspChaat Masala - 1/2 tspLemon Juice - 1/2
Schezwan Chutney - 1 tbsp
Method
- In a cooker add 2 tsp oil. Once the oil gets heated up then add 1 tsp cumin seeds.
- Once the cumin seeds crackle then add the potatoes and saute it.
- Then add the carrots, tomatoes, beetroot and green chillies. Stir it well and add i tsp salt. Let it cook for 2 minutes on medium-high flame.
- Add 1-2 cups of water and let the veggies cook in the pressure cooker for about 2 whistles on high flame and then 3-4 minutes on low flame.
- Turn off the flame and let the cooker release the pressure by itself.
- Mash the veggies using a potato masher.
- Heat a pan on low flame and add 2 tbsp butter and 1 tsp oil so that the butter doesn't burns.
- Once the butter melts then add the onions.
- Saute the onions on medium flame till it becomes pink.
- Then add the capsicum and let it cook for 2 minutes.
- Add 1 tbsp ginger-garlic paste and let it cook for 3-4 minutes or till the raw smell of ginger-garlic vanishes.
- Add 1 tsp kashmiri red chilli powder, 2 tsp pav bhaji masala, 1 tbsp schezwan chutney. Mix well and let it cook for 3-4 minutes.
- Add little water(approx 1/2 cup) and let it cook for a minute or two.
- Then add the mashed veggies and stir it well.
- Add the frozen green peas and let it cook for 5 minutes on medium flame.
- Keep mashing the veggies while it cooks for 5-6 minutes. It makes the bhaji to thicken.
- Add salt as per taste.
- Add 1/2 cup water and cook it for 5 more minutes.
- You can mash more as per the desired texture you want.
- Now add 1/2 tsp chaat masala, lemon juice and mix well.
- The bhaji is ready !
- Toast the pav in a pan with 1 tsp butter and 1 tsp bhaji till it becomes nice and golden.
- Serve hot the delicious pav bhaji is ready to eat !!
